Christmas is coming soon folks. Time for Family! That means your kids will be home invading the kitchen asking for things to eat and searching endlessly in the refrigerator. It also implies that this is the third recipe for my Holiday Recipe Series and one more recipe to go. A total of five. Get into your kitchen and Make Simple Samoa Microwave Fudge. Your kids will be able to make this super easy fudge! It is so creamy and addictive. Sometimes it is just hard to stop at one piece. You might regret it later, but isn’t that what yoga pants and holidays are for? I love recipes like this because they come together easily. No stovetop required? There are nay-sayers to cooking with the microwave, but I can’t live without one. I have lost count of how many times my kids will heat up a burrito, or two. When I discovered recipes that made fudge using the microwave I was like…Yes!!!
Fudge Fact: the origin and history of fudge is unclear, but Fudge is thought to be an American invention. Someone fudged a batch of caramels and the rest is history.
You Can’t Fudge Up your Fudge
Making the Simple Samoa Microwave Fudge is so fast and easy. It’s almost as easy as switching on the kitchen light, according to Ian Malcolm. Making fudge using the microwave will take three minutes tops! And I believe it is the most practical method out there. How can you go wrong? But there is a method to the madness. Please do not just stick the bowl of ingredients in the microwave, push the start button and walk away.
Fudge is like a versatile dessert. Decide on a taste or flavor and made it. Or perhaps you want your fudge to taste like your favorite ice cream, cookie or cake. Go for it. Maybe your Unicorn Fanatic wants to make Unicorn Fudge on Pinterest!! Yes, there is such a thing. 🙂 You can add:
- a flavor extract
- food coloring
- cookie crumbs
- cereal bits
- dried fruit
- your favorite candy
- or maybe your favorite Girl Scout cookie. Wink, wink, nudge, nudge.
After you have decided what kind of fudge you will sink your teeth into, you must decide on how you will make your fudge. Ingredients. Ask yourself, “What will I use in the recipe? Sweetened Condensed Milk, marshmallow creme, brown sugar, etc? Each ingredient brings out a different flavor and texture of the fudge. It all depends on what you like.
This simple Samoa fudge recipe in this post was made using sweetened condensed milk, white chocolate baking chips, and salted butter. Then I mixed in a little of various baking chips and spread it around only on top while warm. Topped it off with a creamy, chewy caramel coconut and dark chocolate drizzle. Ta-Dah! There you have it, a Girl Scout Samoa cookie disguising itself as fudge. To make this fabulous Samoa Microwave Fudge. I hope you have a microwave. If not there is the way of the stove top. It will take just a bit longer. I am all for simple. But I must say, there are recipes I just will not make using the microwave. “It just is not proper,” as I say with a British accent.
Prepare an 8 x 8-inch square dish with parchment. Set aside. Find a medium size glass bowl and add to the bowl 3 cups of white chocolate baking chips. I prefer to use a better quality baking chip like Guittard or Ghirardelli baking chips. Better fat content and flavor. I just prefer these brands. That is me, but feel free to use any chocolate baking chips. No need to go out and buy a different brand of chips. Use what you have, but word of warning, if they have been sitting in your pantry or cupboards since the last Ice Age. Throw them out! Yuck City. Next, add a can of sweetened condensed milk. (not evaporated milk) Totally different. What is the difference? My simplified version below. The more detailed version here.
True Story: I had a neighbor once who use to eat sweetened condensed milk literally by the spoonful. Holy Sugar rush, Batman! No joke.
Sweetened Condensed Milk: The water has been removed from the milk, but sugar has been added.
Evaporated: Milk: Simply stated. About 60 percent of the water in the milk has been removed by evaporation, boiling it down and has less sugar. Also a different consistency.
Add two tablespoons of butter. Stir. Then place it in your microwave at 50% power for 30 seconds. Stir. Repeat at 30-second intervals and stopping to stir each time, about 2 minutes total.
After heating in the microwave for the allotted time, pour into the prepared pan. Spread it around with a small spatula. Optional: Take some various baking chips: mini chocolate, chunks, and some caramel chips sprinkle them on top. Then with a spatula lightly press the chips into the warm fudge. I took a toothpick and just marbled the top while still warm. Place in the refrigerator for at least an hour to harden. Remove. Ready for the final layer. I made a simple caramel sauce and added some sweet shredded coconut. For the caramel sauce: One bag of Kraft Caramel pieces or make your own (those you don’t have to unwrap and they are made with a microwave in 6 minutes!) and two tablespoons of water in a small glass bowl. Heat on 30 until creamy, stirring every 30 seconds. Then add one cup of shredded coconut. Mix together in the bowl. Then with a small spatula spread on the caramel coconut mixture evenly. The last and final step is to drizzle dark, semi-sweet, or milk chocolate in a criss-cross pattern. Now it’s beginning to look like a large square Samoa cookie.
The drizzle: Quickie Microwave Version: (Highly recommended) 1 cup of dark chocolate chips and three tablespoons of heavy cream. In a small glass bowl add the chocolate squares and then add the heavy cream. Place in microwave on high for 30 seconds to 1 minute until the cream begins to bubble, depending on the wattage of your microwave. Then leave it in the microwave for about 2 minutes. This allows the hot cream to melt the chocolate. Then remove the bowl of chocolate from the microwave and whisk together until creamy. Then fill a condiment bottle and drizzle with the chocolate sauce.
There you have it folks, the easiest fudge recipe ever. I don’t think I will ever avoid fudge again. Now it’s time to share the recipe with your kids, so they can help you in the kitchen. Families in the kitchen cooking together are wonderful ways to collect memories. Merry Christmas Friends!
Simple Microwave Samoa Fudge
Yield 48 pieces
A very simple Samoa microwave white chocolate fudge recipe topped with creamy caramel, coconut, and dark chocolate drizzle. Kid Approved!
- 3 cups white chocolate baking chips*
- 1 14-ounce can of sweetened condensed milk
- 2 tablespoons of butter, salted or unsalted
- 1 11 oz. bag of Caramels*
- 2 tablespoons water
- 1 1/2 cup of sweetened shredded coconut
- 1 cup dark chocolate baking squares*
- 3 tablespoons heavy cream
- Various flavored baking chips for marbling*
- Prepare an 8 x 8-inch square dish with parchment.
- In a medium-size glass bowl add 3 cups of white chocolate baking chips.
- Add the can of sweetened condensed milk and the butter
- Then place in microwave for 30 seconds at 50% percent power, stir and repeat at 30-second intervals until approximately 2 minutes. Stir until smooth.
- After heating in the microwave for the allotted time, pour into the prepared pan. Spread it around with a small spatula and set aside.
- Optional step: add various baking chips to the top: mini chocolate, chunks, and some caramel chips sprinkle them on top. Then with a spatula lightly press the chips into the warm fudge. With a toothpick just marble the top while still warm.
- Place dish in the refrigerator for an hour until firm.
- Add to a small bowl the unwrapped caramels and two tablespoons of water. Heat on low, stirring often until smooth. This should take about 10 minutes.
- add the coconut and stir well.
- Then remove the dish from refrigerator and spread mixture on top evenly.
- In a small glass bowl add the chocolate squares and then add the heavy cream.
- Place in microwave on high for 30 seconds to 1 minute until the cream begins to bubble, depending on the wattage of your microwave.
- Then leave it in the microwave for about 2 minutes. This allows the hot cream to melt the chocolate.
- Then remove the bowl of chocolate from the microwave and whisk together until creamy.
- The last and final step is to drizzle dark, semi-sweet, or milk chocolate in a criss-cross pattern.
*Any type of baking can be used or substituted.
*This step is optional. It is up to you if you choose to add additional chips.
* You can use any chocolate for the drizzle.
