Do you enjoy the combination of blueberries and bananas? This Banana Blueberry Quick Bread is another one of my simple and quick recipes that you can put together in about 20 minutes! It is a wonderful recipe for when the family requests a dessert after dinner, breakfast, second breakfast and just about anytime. It can also be tailored by switching out different ingredients and replacing them items you prefer or have in your pantry. I don’t have a pantry but it is on my long wish list of the dream kitchen!
Banana Blueberry Bread begins with 4 ripe bananas in a large bowl. Peeled and mashed with a hand mixer. It all depends on whether you prefer bits or no bits of banana in your bread. If you decide on bits (mashed), use a potato masher, they work wonders. If not, just use a plain old fork. Works just as well but it just takes longer.
This is a simple recipe using one bowl. Why dirty another bowl?
After mashing the bananas, the easy part is next. Preheat the oven to 350 degrees F. Then take 9 X 5 loaf pan and either line the bottom with parchment paper or grease the bottom of the pan only. Greasing the sides will make the bread stick to the sides of the pan and you will have a mess on your hands. Go for the parchment paper, and you won’t have nightmares!
Add to the bowl of mashed bananas, the sugar ( I use brown sugar), vegetable/canola oil and 1 egg. You could use unsalted butter in place of the oil. Just make sure it is melted. 1/4 cup of butter is 4 tablespoons=1/2 stick. I am telling you this is so easy and quick. Stir a bit until combined. We are already halfway done. Take all the dry ingredients: flour, baking powder, and baking soda, add them to the same bowl. Make sure to stir until all ingredients are moistened. Don’t over mix. It might turn out dry and crumbly. You can do this by hand or like I do. Get out your hand mixer. Easier on the muscles. I have shoulder and arm issues. It is much easier for me to use a machine to do the work! But if you need the workout, go ahead!

The fun part is next. Grab those plumb, yummy and slightly tart fresh blueberries. Add the blueberries to the batter, steal a few to eat, and then save a few for sticking on top before putting into the oven. Fold in gently the blueberries to the batter. Then pour batter into parchment lined or greased 9 x 4 inch loaf pan. I have a glass loaf pan, but you are welcome to use whatever you have on hand. Just make sure you adjust the cooking time if needed. Sometimes different loaf pans cook differently depending on the material. But don’t hold me to that. Just experiment and see what works for you :-)!
Place the pan in a preheated oven on the middle rack and bake for approximately 55 minutes to one hour or until a knife inserted in the center becomes clean. When done remove the wonderful smelling loaf and place on metal rack. Allow to cool 10-15 minutes or so, loosen from the loaf pan and it should come right out! Thank goodness for parchment paper. Right? Dig in and enjoy. Make sure to share some with your family.
Banana Blueberry Quick Bread
Yield 1 9 x 5 inch loaf
This is a very moist banana bread with sweet plump blueberries. You won't be able to stop at just one slice!
- 4 medium very ripe bananas*
- 1/2 cup sugar*
- 1/4 cup vegetable oil
- 1 egg
- 1 1/2 cups All Purpose Flour*
- 1 1/2 teaspoons Baking Powder
- 1/4 teaspoon Baking Soda
- 1 cup of fresh Blueberries
Preheat the oven to 350 degrees F.
Prepare a 9 X 5 inch loaf pan by lining with parchment paper, this is helpful for when the bread done baking and cooled. You can just lift out the bread. No mess. Or just spray with non-stick cooking oil.
In large bowl peel, slice and mash your bananas. Then add the sugar*, vegetable oil, and egg. Mix well either with a hand mixer or by hand with wooden spoon.
Now add to the same bowl the dry ingredients: flour*, baking powder, baking soda and stir until moistened. Fold in with a spatula the cup of fresh blueberries. Reserve a few of them to place on top before baking.* Pour batter into bread pan.
Place pan on middle rack in oven and cook for approximately 60 minutes or when a knife or toothpick inserted in the center comes clean. Cool for 10 minutes on wire rack.
*I used brown sugar, but any sugar would be fine. Even honey, Maple Syrup (100% pure) and Agave have worked. But reduce the amount of you are using liquid a sweetener. Adjust the amount of sugar. The riper the bananas I have found add sweetness to the bread and lesson the need for the amount it states in the recipe. Try substituting 1/4 Brown Sugar, packed instead.
*Make these Gluten Free by replacing All Purpose Flour with Bob's Red Mill Gluten Free 1 to 1 Baking Flour. No additional ingredients required.
